Sausage, Kale, and Sweet Potato Soup

I haven't made this in a while and found the recipe while looking for inspiration.  Thought I would share if you need creamy, dairy free soupy ideas.

Sausage, Kale, and Sweet Potato Soup

1 roll (1lb) of all natural jimmy dean breakfast sausage
1 onion, chopped
1 tsp chopped garlic
1 bunch kale, removed from stalk and roughly chopped
3 small sweet potatoes, peeled and cut into bite size pieces (about 2 cups, we like sweet potatoes!)
5 cups chicken broth
Pinch red pepper flakes
1/2 tsp oregano
1 can unsweetened, full fat coconut milk
3 Tbs corn starch or arrowroot starch/powder

Brown sausage in a large Dutch oven or pot until cooked through, breaking up into pieces. Remove from from pot with a slotted spoon and set aside. Do not drain fat. Add chopped onion and garlic; cook until translucent. Add chopped kale, you may have to do this in batches depending on your pot until it wilts down. Once it starts to cook add spices, chopped sweet potatoes, chicken broth, and coconut milk. If ingredients are not all covered by broth add a little water. 

Cover and let cook until potatoes are just cooked through. With a whisk, combine the milk and corn starch until dissolved. Add to pot and turn heat to low, stirring until combined and flavors are mixed (approximately 5 minutes). 

Serve with crusty bread. So yummy!
